Ancient Phoenicia encompassed the territories now defined by modern Lebanon, Syria, Jordan, Israel and the Palestinian Territories. While great differences exist among the people of these regions, a spice blend known as Za’atar binds the culinary traditions. In the Kardea Kitchen, we use this blend with vegetables, sea food, whole grains and beans.
